Chicken And Rice Casserole(Diabetic) - cooking recipe

Ingredients
    1 can cream of chicken or mushroom soup
    3/4 c. fat-free chicken broth
    1 c. diced, cooked chicken
    1/2 c. long grain rice
    1/2 tsp. parsley
Preparation
    Cook rice until tender and fluffy. Combine soup and broth in a small saucepan. Cook and stir over medium heat until smooth. Add chicken, rice and parsley to soup mixture.
    Mix well.
    Place in a 1 1/2-quart casserole dish and bake at 350\u00b0 until lightly brown.
