Zucchini Relish - cooking recipe
Ingredients

10 c. ground or shredded zucchini
4 c. chopped onions
5 Tbsp. salt
2 1/4 c. white vinegar
4 1/2 c. sugar
1 Tbsp. nutmeg
1 tbsp. dry mustard
1 Tbsp. turmeric
1 Tbsp. cornstarch
1/2 tsp. pepper
2 tsp. celery salt
1 sweet green pepper, chopped fine
1 sweet red bell pepper, chopped fine
Preparation

Put first three ingredients in a large bowl and mix well.
Let stand overnight.
Drain and rinse in cold water.
Drain well again and put in large kettle (pot) with the remaining ingredients. Bring to a boil and simmer, uncovered, stirring occasionally, for 30 minutes or until desired consistency.
Pour into hot, sterilized jars and seal.
Process 5 minutes.
Makes 6 or 7 pints.
