Cheese Grits(Makes 4 Servings) - cooking recipe

Ingredients
    4 1/2 oz. hominy grits (not quick or instant)
    1/4 c. egg substitute
    3 oz. extra sharp Cheddar cheese, shredded
    3/4 oz. Parmesan cheese, grated
    1/4 tsp. black pepper
Preparation
    Add 3 1/2 cups water to the top of a medium double boiler. Place over high heat; bring to a boil.
    Gradually add grits, stirring constantly.
    Cook over low heat, stirring constantly for 5 minutes.
    Add 1 inch water to the bottom of the double boiler; place over medium-high heat and bring to a simmer.
    Place upper half of boiler on top.
    Cook, covered, for 20 minutes.
