Corn "Oysters"(Makes 4 Servings) - cooking recipe

Ingredients
    2/3 c. all-purpose flour
    3/4 tsp. baking powder
    1/2 tsp. salt
    1/3 c. low-fat milk (1%)
    1 egg
    2 c. corn kernels
    about 3 Tbsp. vegetable oil
Preparation
    Combine flour, baking powder, salt, milk and egg in blender or food processor.
    Whirl just until smooth.
    Transfer to bowl.
    Stir in corn.
    Pour 1 tablespoon of the oil into large nonstick skillet. Heat skillet over medium heat.
    Drop rounded tablespoons of batter into skillet.
    Cook until golden and crisp on bottom, 2 to 3 minutes.
    Turn over to brown other side.
    Keep warm.
    Repeat with remaining batter and oil.
