Rotel Potatoes - cooking recipe

Ingredients
    1/2 stick oleo
    1 chopped onion
    1 bell pepper, chopped
    1 can mushrooms, drained
    1 can Ro-Tel tomatoes, chopped with juice
    1 can cream of mushroom soup
    1 lb. Velveeta cheese, cubed
    5 lb. potatoes, sliced
Preparation
    Place
    sliced potatoes into flat casserole dish.
    Saute onion and bell pepper in oleo until done.
    Add mushrooms, soup and Ro-Tel;
    heat
    and stir until blended.
    Add cubed Velveeta and pour
    mixture
    over
    potatoes.
    Bake
    at 350\u00b0 for 20 to 30 minutes until flavors blend.
    Serves 10 to 15.
