My Grandmother'S Chicken Croquettes - cooking recipe

Ingredients
    1 qt. chopped, cooked chicken
    salt
    black pepper
    red pepper to taste
    1 qt. milk
    1/2 onion, sliced very thin
    rind of 1 lemon
    3 eggs
    1 Tbsp. parsley, chopped
    1/4 whole nutmeg, grated
    1/2 lb. butter
    1 Tbsp. (rounded) cornstarch
    3 Tbsp. flour
    3 Tbsp. milk
    bread crumbs
Preparation
    Put the onion and lemon rind into 1 quart of milk; let it come almost to a boil.
    Break into a bowl the eggs, minus the yolk of one.
    Add parsley, nutmeg and red pepper.
    Into a large saucepan, but butter, cornstarch and flour; cream these.
    As soon as milk comes nearly to a boil, remove onion and lemon rind.
    Pour over creamed butter and flour, stirring all the time.
    Add eggs, parsley and seasoning; when thickened, add the meat.
    Taste for seasoning; pour on flat dish to cool.
    Mold into croquettes, using large, pointed wine glass.
    Dip into yolk of egg which was put aside.
    Mix with 3 tablespoons of milk; roll in bread crumbs.
    Fry in deep hot lard.
    Serves 10.
