Vegetable-Cheese Casserole - cooking recipe

Ingredients
    1 medium onion
    small amount butter
    12 oz. Velveeta cheese
    1 can cream of celery soup
    1 pkg. broccoli-cauliflower-carrot mixture, parboiled
    approximately 2 c. regular rice
    2 to 3 c. chopped cooked chicken (optional)
Preparation
    Saute onion in butter.
    Melt cheese and soup in onion.
    Add vegetables, rice and chicken, if desired.
    Bake in a 2 to 2 1/2-quart casserole or 9 x 13-inch pan at 350\u00b0 for about 30 minutes.
