Minestrone Soup(Italian) - cooking recipe

Ingredients
    1 small onion, minced
    1 clove garlic, minced
    2 Tbsp. olive or salad oil
    1 c. chopped tomatoes
    5 beef bouillon cubes
    3/4 c. diced celery
    1 c. chopped cabbage
    1 tsp. salt
    1/8 tsp. pepper
    1 lb. can white or red kidney beans (plain water packed)
    1 c. cooked shells (small)
    1/4 c. Parmesan grated cheese
Preparation
    Saute the onion and garlic in oil until soft.
    Add tomatoes, bouillon cubes, 1 1/2 quarts of water, celery and cabbage.
    Bring to a boil and simmer about 30 minutes until vegetables are tender. Add seasonings, beans and shells.
    Simmer 5 to 10 more minutes. Stir in grated cheese and serve. Serves 4 to 6.
    Preparation time: 10 to 20 minutes.
    Cooking time:
    40 to 45 minutes.
