New Orleans Red Beans - cooking recipe

Ingredients
    1 lb. red beans
    1 small piece green pepper
    1 large chopped onion
    1 large slice pork, cubed
    pinch of thyme
    1 large garlic clove, minced
    1 bay leaf
    1 rib chopped celery
    1 large ham hock
    4 qt. water
Preparation
    Bring water to boil in large pot with beans.
    Add all ingredients.
    Boil for 1/2 hour.
    Reduce heat to simmer; continue to cook for 3 hours, or until tender.
    Any other dry beans may be used for this recipe.
