Citrus Salad In Orange Cups - cooking recipe

Ingredients
    1 c. honey
    1 Tbsp. plus 1 tsp. lime juice
    2 tsp. lemon juice
    1 egg, beaten
    6 large oranges
    1 1/2 c. grapefruit sections
    1 1/2 c. halved fresh strawberries
    1/4 c. whipping cream
Preparation
    Combine first 4 ingredients in a small saucepan; cook over medium heat, stirring constantly until thickened.
    Remove from heat; cover and chill 1 hour.
    Cut a 1/2-inch slice from the stem end of each orange, clip membrane and carefully remove pulp.
    (Do not puncture rind.)
    Drain orange cups on paper towels.
    Remove membrane from orange pulp, cut pulp into bite size pieces. Combine orange pieces, grapefruit sections and strawberries; drain.
    Spoon fruit mixture evenly into orange cups; set aside. Beat whipping cream until stiff peaks form.
    Fold into chilled honey mixture.
    Spoon mixture over orange cups.
    Yields 6 servings.
