Vichyssiose(Serves 4) - cooking recipe

Ingredients
    2 leeks (white parts), finely chopped
    2 Tbsp. chopped shallots
    2 Tbsp. butter
    3 medium potatoes
    1 small carrot
    2 c. chicken broth
    1/2 tsp. each salt and white pepper
    1 c. milk
    1 1/2 c. half and half
    chopped parsley or chives (garnish)
Preparation
    Saute leeks and onions in butter until transparent.
    Add potatoes, carrots, chicken broth, salt and pepper. Bring to boil. Reduce heat and simmer until veggies are tender.
    Mash or process in food blender. Strain.
    Return to heat and add the milk. Stir and blend well. Add seasoning and cool.
    Add cream and chill several hours or overnight.
    Serve in chilled soup bowls.
