Eggplant Fritters - cooking recipe

Ingredients
    1 large eggplant
    1 1/2 c. dry breadcrumbs
    1/2 c. sliced green onions
    2 Tbsp. minced fresh parsley
    2 cloves garlic, crushed
    vegetable oil
    2 eggs, slightly beaten
    salt
Preparation
    Cut the eggplant into 1-inch cubes.
    Cook in a small amount of water on stove top or in microwave until tender.
    Drain and mash. Add breadcrumbs, spices and eggs.
    Form mixture into balls and either fry in vegetable oil or bake at 325\u00b0 in a baking dish sprayed with Pam.
    Serve with marinara sauce, cocktail sauce or salsa.
