Ingredients

2 c. vinegar
2 c. water
2 c. sugar
1 Tbsp. cinnamon
1 tsp. cloves (whole spices)
1 tsp. allspice
Preparation

Mix ingredients.
Cover and simmer 15 minutes.
Top and wash beets.
Put into kettle of hot water until peel slips off them. Peel beets; slice or quarter and place in hot sterilized jars. Bring vinegar mixture to a boil and pour over beets and seal jars.
