Tortellini Soup - cooking recipe

Ingredients
    1 large onion, chopped
    2 cloves garlic, minced
    1 Tbsp. olive oil
    3 (14 oz.) cans beef broth
    1 (14 1/2 or 16 oz.) can stewed tomatoes
    1 tsp. basil
    7 oz. tortellini
    1 c. grated Parmesan cheese
    1 green pepper, diced
    1/2 to 3/4 c. picante sauce
Preparation
    Cook onion and garlic in olive oil until tender, about 6 minutes.
    Add broth.
    Stir in tortellini.
    Simmer, uncovered, about 15 minutes.
    Stir in stewed tomatoes and picante sauce.
    Add green pepper.
    Continue to cook 3 to 4 minutes or until tortellini is tender.
    Ladle into soup bowls and sprinkle with cheese. Serves 8.
