Impossible Pina Colada Pie - cooking recipe

Ingredients
    4 eggs
    1/4 c. rum *
    1 (8 oz.) can crushed pineapple, drained
    1/2 c. buttermilk baking mix
    1/4 c. milk
    1 (15 oz.) can cream of coconut (1 1/2 c.)
    1 c. flaked coconut
    1 c. flaked coconut
Preparation
    Heat oven to 350\u00b0.
    Grease pie plate.
    Beat all ingredients, except 1 cup coconut, until blended.
    Pour into plate.
    Sprinkle with cup of coconut.
    Bake about 40 to 45 minutes or until knife inserted in center comes out clean.
