Broccoli Apple Soup - cooking recipe
Ingredients

1 Tbsp. olive oil
3/4 tsp. thyme, crushed
1 c. red cooking apples
1/4 c. nonfat yogurt
4 c. low-salt chicken stock
2 c. broccoli stalks
1 c. thinly sliced onion
1/2 c. diced celery
2 Tbsp. minced parsley
1/4 tsp. white pepper
Preparation

Peel and dice fresh broccoli stalks; peel and dice apples. Heat oil in large pot with lid.
Add broccoli, thyme, onion, apple and celery.
Cover and cook over low heat 10 minutes.
Add chicken stock and pepper and cook 30 minutes more.
Remove from heat and cool slightly.
Puree 1 cup at a time in blender or food processor.
Serve hot or chilled.
Garnish with dollop of yogurt and sprinkling of minced parsley.
