Mini-Cheesecake - cooking recipe

Ingredients
    17-18 cupcake liners
    17-18 vanilla wafers
    2 - 8 oz. packages cream cheese, softened
    3/4 cups sugar
    2 eggs
    1/2 tbsp. lemon juice
    1 tsp. vanilla
    1 - 21 oz. can cherry or blueberry pie filling
Preparation
    Preheat oven to 375 degrees.
    Line muffin baking pan with paper cupcake liners; place 1 wager on bottom of each liner.
    In a medium bowl, beat cream cheese; add sugar and beat again.
    Add eggs, lemon juice and vanilla and beat till light and fluffy.
    Fill line to 2/3 full of cream cheese mixture.
    Bake 15-20 minutes.
    Remove from oven and pan; cool.
    Top w/ desired pie filling.
