Chicken Caldo(Great Low-Fat Recipe) - cooking recipe
Ingredients

1 gal. water
3/4 c. concentrated chicken stock in powder form
1 (16 oz.) can chopped tomatoes with green chiles
2 c. vegetables*
1 bunch cilantro, finely chopped
1 large onion, chopped
2 c. chicken, cooked and shredded
1 Tbsp. garlic powder
1 Tbsp. ground cumin
avocado, chopped
Cheddar or Monterrey Jack cheese, grated
Spanish Rice (see recipe in Vegetables)
Preparation

*Vegetables may be any combination of chopped spinach, chopped cabbage, chopped tomatoes, kernel corn, shredded carrots, diced squash, or any other ideas you may have.
