Ingredients

3 c. cooked rice, cooled to room temperature
2 egg whites, lightly beaten
1 1/2 c. Mozzarella cheese
nonstick cooking spray
1 large Vidalia or sweet onion, thinly sliced into rings
1 1/2 Tbsp. olive oil
1/4 tsp. sugar (optional)
1/2 tsp. salt
4 oz. mushrooms, thinly sliced
1/4 c. red pepper, thinly sliced into rings or strips
2 plum tomatoes, thinly sliced
1/2 tsp. basil, oregano or fresh parsley leaves (I use all)
2 Tbsp. Parmesan cheese, freshly grated
Preparation

Preheat oven to 400\u00b0.
Combine rice, egg whites and 1/2 cup Mozzarella cheese in a bowl.
Mix thoroughly.
Coat 12-inch metallic pizza pan or 9 x 13-inch rectangular baking pan lightly with nonstick cooking spray.
Press the rice mixture firmly into the pan.
Bake 18 minutes or until surface is crispy and lightly browned around the edges.
