Minestrone(A Meal In A Pot) - cooking recipe

Ingredients
    6 Tbsp. butter or margarine
    3 large carrots, sliced
    2 to 3 celery stalks, sliced
    2 large onions, diced
    1 garlic clove, minced
    1 head cabbage (1 1/2 lb.), coarsely sliced
    1 (16 oz.) can tomatoes
    8 c. water
    1/3 c. uncooked rice or orzo
    2 tsp. salt or less
    2 tsp. Worcestershire sauce
    1/4 tsp. oregano leaves
    1/4 tsp. pepper
    4 medium potatoes, peeled and diced
    4 to 6 beef bouillon cubes
    2 large zucchini, bite-sized pieces
    2 (15 1/4 to 20 oz.) cans red kidney beans, drained
    1 (10 oz.) pkg. frozen chopped spinach
    1/2 c. Parmesan cheese, grated
Preparation
    In a large pot, saute carrots, celery, onions, garlic and cabbage in butter until brown (about 20 minutes).
    Add tomatoes with fluid and next nine ingredients.
    Bring to a boil and simmer for 30 minutes or until rice and vegetables are tender.
    Add beans and spinach (cook before adding) and bring entire soup to a simmer.
    Add water if needed.
    Serve with Parmesan cheese.
    Makes about 18 cups (4 1/2 quarts).
