Chili For A Crowd(Serves 16) - cooking recipe

Ingredients
    3 lb. lean ground beef
    1 lb. sweet or hot Italian sausage, remove meat from casing
    4 medium-large onions, chopped coarsely
    6 cloves garlic, minced (you can use garlic powder)
    2 tsp. pepper
    2 Tbsp. ground cumin
    3 Tbsp. chili powder
    2 Tbsp. salt (optional)
    2 Tbsp. dried basil
    1 1/2 Tbsp. dried oregano
    1 can (12 oz.) tomato paste
    2 large cans (2 lb. 3 oz.) Italian plum tomatoes
    3 cans (16 oz.) dark red kidney beans
    1/4 c. Dijon mustard
    1/4 c. red wine
    1/8 c. red wine vinegar (optional)
Preparation
    Brown ground beef, sausage and onion in very large soup kettle over medium-high heat.
    Spoon off excess fat.
    Over low heat, stir in pepper, tomato paste, garlic, cumin, chili powder, mustard, salt, basil and oregano.
    Simmer for 15 minutes.
    Add tomatoes, breaking up with your hands or the back of a spoon.
    Add wine, wine vinegar and beans.
    Stir well and simmer uncovered for about 30 minutes.
    Serve with bowls of sour cream, chopped onions and grated Cheddar cheese for garnish.
    Goes great with East Coast Grilled Cornbread.
