Ingredients

1/3 c. sugar
2 Tbsp. cornstarch
1/2 tsp. salt
dash of pepper
1/4 c. vinegar
1 can diced or small whole beets
1 c. beet liquid plus water
Preparation

Combine sugar, cornstarch, salt and pepper in a 1-quart casserole.
Stir in vinegar and beet liquid.
Add beets.
Cover. Microwave on High 4 to 5 minutes until slightly thickened.
Let stand 3 minutes before serving.
