Chicken Breasts With Lemon Butter - cooking recipe

Ingredients
    4 chicken breasts, boned, skinned and cut in half
    salt
    freshly ground pepper
    2 Tbsp. all-purpose flour
    2 eggs, beaten with 2 Tbsp. heavy cream
    1 1/2 c. fine dry breadcrumbs
    safflower or peanut oil
    6 Tbsp. unsalted butter
    juice of 1 medium lemon
Preparation
    Wash,
    then
    pat chicken dry with paper towels.
    Season on both
    sides
    with salt and pepper.
    Dust very lightly with flour, shaking off any excess.
