Sweet Potato Pie - cooking recipe

1 (8-inch) unbaked pie crust
1 1/2 c. boiled mashed sweet potatoes
1 1/4 c. sugar
3 eggs
1 cube butter or margarine
1/4 c. canned milk
1 tsp. vanilla extract
1 tsp. nutmeg
1 tsp. lemon extract
Preparation

Before measuring sweet potatoes, mash through sieve to remove strings.
In large bowl mix potatoes, sugar, eggs, butter, milk and nutmeg.
Melt butter.
Mix all ingredients well.
Add vanilla and lemon extract last.
Pour into unbaked pie shell and bake at 425\u00b0 for 45 to 50 minutes.
