Ingredients

1 c. sugar
1/2 c. shortening
1 egg
1/2 c. drained crushed pineapple
2 c. flour
1/4 tsp. salt
1/4 tsp. baking soda
1 can flaked coconut
1/2 c. pecans, coarsely chopped
Preparation

Combine sugar and shortening in large bowl.
Beat at medium speed with electric mixer until blended well.
Beat in egg.
Mix in pineapple.
Combine flour, salt and baking soda.
Add gradually to creamed mixture at low speed.
Mix until well blended.
Stir in coconut and nuts with spoon.
Drop by teaspoon 2 inches apart onto greased baking sheet.
Bake in preheated oven at 375\u00b0 for 10 to 12 minutes.
Remove to cooling rack and enjoy.
Makes about 4 dozen cookies.
