Hamburger Spinach Quiche(Good! Makes 2 Pies.) - cooking recipe

Ingredients
    2 deep dish pie shells
    1 pkg. frozen spinach, cooked, chopped and drained dry
    1 lb. ground beef or more
    6 eggs
    milk
    1 lb. grated cheese (your choice, I use 1/2 lb. Swiss and 1/2 lb. Cheddar or Monterey Jack)
    1/2 onion, chopped
    1 small piece minced garlic
    1/2 bell pepper, chopped
    2 fresh tomatoes, sliced
    parsley, salt and pepper to taste
    12 strips bacon, cooked and crumbled
    1/3 c. chopped onion
    1 can mushrooms (optional)
    1 c. grated Swiss, Monterey Jack or yellow Cheddar cheese
