Strawberry Spread - cooking recipe

Ingredients
    1 qt. fresh strawberries, washed, hulled and coarsely chopped
    3/4 c. cold water, divided
    2 Tbsp. lemon juice
    1/4 tsp. ground cinnamon
    3 Tbsp. cornstarch
    1 Tbsp. plus 1 tsp. powdered sugar substitute
Preparation
    Combine strawberries, 1/2 cup water, lemon juice and cinnamon in a small Dutch oven; stirring well, bring to a boil.
    Dissolve cornstarch in remaining 1/4 cup water and stir into boiling mixture.
    Reduce heat and simmer 2 or 3 minutes or until mixture thickens, stirring constantly.
    Remove from heat and cool.
    Stir in sugar substitute.
    Diabetic exchange: free up to 1 tablespoon.
