Chili-Fried Corn - cooking recipe

Ingredients
    2 tsp. vegetable oil
    1 c. chopped onions
    1 (1 lb.) can corn, drained
    1 (4 oz.) can chopped green chilies, drained
    1/2 c. shredded low-fat Cheddar cheese
Preparation
    Heat oil in a large nonstick skillet over medium-high heat. Add onion; cook, stirring frequently, until onions start to brown, about 3 minutes.
    Add corn and chilies.
    Cook, stirring frequently, 5 minutes.
    Remove skillet from heat and sprinkle cheese evenly over corn.
    Cover and let stand 5 minutes to melt cheese.
    Makes 4 servings.
