Tempura(Servings: 4) - cooking recipe

Ingredients
    1 egg, beaten
    1/2 c. ice water
    1 c. flour
    1 lb. shrimp
    1 eggplant, sliced
    1 green pepper, sliced
    1 carrot, sliced
    1 onion, sliced
    1 sweet potato, sliced
    1 white radish, grated
    1 piece ginger, grated
    1 c. soup stock or Dashi
    1/4 c. mirin
    1/4 c. soy sauce
Preparation
    Remove head and shell of shrimp.
    Slice vegetables.
    Place in water for 1/2 hour.
    Make batter just before cooking.
    Beat egg; add ice water and flour.
    Mix with chopsticks.
    Do not overmix. Heat oil in a deep pan to about 370\u00b0.
    Coat materials in batter. Start with shrimp and then vegetables.
