Broccoli Soup - cooking recipe

Ingredients
    1 head fresh broccoli (about 1 1/2 lb.)
    1 Tbsp. butter or olive oil
    1 medium onion, chopped
    1 clove garlic, minced or 1/4 tsp. garlic powder
    1 potato, pared and diced
    1/8 tsp. ground nutmeg
    1 can (about 13 oz.) chicken broth or 1 1/2 c. homemade chicken broth
    ground black pepper to taste or dash of cayenne pepper
    parsley or basil to taste
    1 c. low-fat milk
    3 Tbsp. grated Parmesan or Romano cheese
Preparation
    Wash and trim broccoli.
    Separate stalks and cut into bite-size pieces.
    In a large saucepan or soup pot over medium heat, saute onion and garlic in butter or oil until the onion is soft but not brown.
    Add broccoli (save a few small flowerets for water and garnish), potato, chicken broth, pepper and herbs.
    Bring to a boil.
    Lower heat and simmer for 15 to 20 minutes.
