Corn Fritters - cooking recipe

Ingredients
    1 c. flour
    1 1/2 tsp. baking powder
    2 eggs
    1/3 c. milk
    1 (15 1/4 oz.) can whole kernel corn, drained
    1 Tbsp. margarine, melted
    vegetable oil (for deep-frying)
    confectioners sugar
    maple syrup, warmed
Preparation
    In a bowl, combine flour and baking powder; set aside.
    In another bowl, beat the eggs and milk; stir in corn and margarine. Stir into dry ingredients just until blended.
    In an electric skillet, heat oil to 375\u00b0.
    Drop batter by heaping teaspoonfuls into hot oil; fry for 2 to 3 minutes or until golden brown.
    Drain on paper towels.
    Dust with confectioners sugar.
    Serve with syrup.
    Yield: about 2 dozen.
