Southern Sweet Potatoes - cooking recipe

4 lbs. Sweet Potatoes
1\\2 C. Butter or Margarine, softened
1\\3 C. Bourbon (optional)
1\\2 C. Orange Juice
1\\4 C. Brown Sugar
1 tsp. Salt
1\\4 tsp. Ground Cinnamon
1\\8 tsp. Ground Nutmeg
1\\3 C. Pecans or Walnuts,chopped
Preparation

Scrub potatoes under running water. Cook, covered in lightly salted boiling water just till tender, about 35 min. Drain, when cool enough to handle, peel and place in large bowl. While potatoes are still warm, mash with electric mixer or masher. Add butter, bourbon, orange juice, brown sugar, salt, cinnamon and nutmeg. Beat until mixture is smooth and fluffy. Preheat oven to 350\u00b0. Turn sweet potato mixture into a 2 quart casserole dish that has been lightly buttered, or using a nonstick spray, buttered flavored. pulling into attractive swirls with back of spoon. At this point may be covered and chill until ready to bake. Sprinkle nuts around edge to make border. Bake for 45 min.
