1 Tbsp. Dijon mustard
1 tsp. salt
1 Tbsp. fresh parsley, minced
1/4 c. sour cream
3/4 c. mayonnaise
1/2 c. sugar
1/2 c. vinegar
1/2 tsp. salt
dash of pepper
juice drained from 2 (16 oz.) cans beets
