Nutty-Chicken-Rice Salad - cooking recipe
Ingredients

2 c. chopped, cooked chicken
1 1/2 c. cooked rice, cooled
1 c. diced celery
1 (8 oz.) can crushed pineapple, drained
3/4 c. chopped pecans
1/4 c. chopped green pepper
1/4 c. finely chopped onion
1/2 c. mayonnaise
2 Tbsp. oil
1 Tbsp. red wine vinegar
1 tsp. salt
1/2 to 3/4 tsp. curry powder
2 tsp. lemon juice
Preparation

Combine first 7 ingredients in a large bowl; mix well. Combine next 6 ingredients; stirring well.
Add to chicken mixture and toss gently.
Chill.
Serve on lettuce leaves.
Yields 4 to 6 servings.
