Potato Soup - cooking recipe

Ingredients
    1 1/2 c. chopped celery
    1 1/2 c. chopped carrots
    1 1/2 c. chopped onions
    8 c. diced potatoes
    chicken broth (or water)
    6 to 8 c. whole milk
    1 lb. cubed Velveeta cheese
    1/4 lb. grated Cheddar cheese
Preparation
    Simmer celery, carrots and onions in enough broth or water to cover until soft.
    Add potatoes and broth or water to cover.
    Add salt and white pepper.
