Lemon Pudding Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    1/4 c. water
    1 tsp. vanilla
    1 c. flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 pkg. lemon pudding & pie filling
Preparation
    Beat eggs 5 minutes;
    add sugar gradually until light and fluffy.
    Add water & vanilla.
    Mix well.
    Add baking powder and salt to flour.
    Add dry ingredients to egg mixture.
    Pour into a greased, foil-lined cookie sheet pan.
    Bake at 375\u00b0 for 12 to 15 minutes.
    Loosen edges and roll into a dish towel sprinkled with powdered sugar.
    Prepare pudding according to directions on box and cool.
    Unroll and spread evenly with lemon filling.
    Roll up and chill.
