Hominy Au Gratin - cooking recipe

Ingredients
    1 can hominy, drained
    1/4 medium onion, chopped
    1/4 c. pimento, drained (optional)
    2 Tbsp. margarine
    2 Tbsp. flour
    1 c. milk
    1 c. grated cheese (your choice)
Preparation
    Combine hominy, onion and pimento in a greased 1 1/2-quart casserole.
    In a small saucepan, melt margarine.
    Stir in flour. Add milk.
    Cook, stirring constantly, until bubbly and thickened. Stir in cheese.
    Heat until melted.
    Pour over hominy, mixing. Bake approximately 20 minutes at 350\u00b0 until nice and brown.
