Roasted Tomato Bruschetta - cooking recipe

Ingredients
    8 plum tomatoes, chopped
    4 cloves garlic, minced
    2 Tbsp. Emeril's Italian Essence
    3 Tbsp. olive oil
    1/2 tsp. salt
    1/2 c. shredded Parmesan cheese
    12 slices toasted French bread
    chopped basil leaves
Preparation
    In large roasting pan, combine tomatoes, garlic, Essence, olive oil and salt. Toss gently and bake at 375\u00b0 for 25 minutes or until slightly browned. Serve on toasted French bread, sprinkle with basil leaves, cheese and additional olive oil, if desired. Makes 4 servings.
