Crustless Ricotta Pie - cooking recipe

Ingredients
    3 lb. Ricotta cheese
    1 1/2 c. sugar
    9 eggs
    9 Tbsp. flour
    2 c. evaporated milk (this is a little more than 1 can)
    2 tsp. vanilla
    grated orange and lemon rind to taste
    cinnamon
Preparation
    Beat cheese and
    sugar, then alternate, adding eggs and flour. Add
    remaining
    ingredients.
    Fill greased and floured pans to slightly below
    top
    (pies
    puff
    up,
    then
    sink when cooled). Sprinkle tops with cinnamon.
    Bake at 325\u00b0 for about 1 hour.
