Persimmon Bread - cooking recipe

3 eggs
1 c. oil
2 c. sugar
3 tsp. vanilla
3 c. sifted flour
1 tsp. salt
1 tsp. soda
3 tsp. cinnamon
1/4 tsp. baking powder
2 c. persimmon pulp
1 c. pecans
Preparation

Beat eggs, vanilla, sugar and oil together.
Sift flour, salt, soda, cinnamon and baking powder; add to egg mixture.
Beat well. Fold in persimmon and chopped nuts.
Pour into greased and lightly floured pan.
Bake at 350\u00b0 for 1 hour or until toothpick comes out clean when tested.
Let cool in pan for 10 minutes, then remove.
