Cauliflower Soup - cooking recipe
Ingredients

1 medium cauliflower, cooked and pureed in processor (should be 3 c.)
4 c. chicken broth
4 Tbsp. butter
1/2 small onion, chopped
1/2 bay leaf
1/4 c. flour
1 c. light cream
salt and pepper to taste
Preparation

Saute onion and bay leaf in butter until onion is tender and golden.
Remove bay leaf and discard.
Add flour to onion and butter; cook and stir for 3 minutes.
Remove from heat; add chicken broth, stirring constantly.
Return to heat and bring just to boil.
Let simmer gently and add pureed cauliflower.
Add cream to hot soup.
If too thick, you may add milk.
Add salt and pepper to taste.
