Cream Of Potato Soup - cooking recipe
Ingredients

3 potatoes, pared and sliced
1 onion, minced
2 c. fat skimmed chicken broth (low sodium canned or homemade)
1 1/2 c. water
1 (13 oz.) can evaporated skim milk
salt and white pepper to taste (optional)
3 Tbsp. minced chives (optional)
Preparation

Combine potatoes, onion, broth and water in saucepan.
Simmer, covered, 35 minutes.
Pour into blender.
Cover; blend until smooth.
Return to saucepan and heat to boiling.
Stir in milk. Reduce heat and simmer, covered, 4 to 5 minutes.
Sprinkle with salt and pepper; garnish with chives, if desired.
Makes 8 servings.
