Pineapple Yam Puff - cooking recipe
Ingredients

1 (20 oz.) can crushed pineapple in syrup
3 c. cooked mashed yams (about 1 1/4 lb.)
3 eggs
2/3 c. whipping cream (unwhipped)
1/2 c. butter or margarine, softened
1/4 c. brown sugar, packed
1 Tbsp. fresh grated orange peel
1/2 tsp. mace
Preparation

Drain and discard 1 cup syrup from pineapple.
Beat yams with remaining ingredients until smooth.
Stir in pineapple.
Pour into greased 2-quart casserole dish.
Bake in a 375\u00b0 oven for 50 to 60 minutes until puffed and lightly browned.
Serve with pork or poultry.
A good Thanksgiving dish.
