Jambalaya - cooking recipe

Ingredients
    1 1/2 lb. sausage or cubed beef
    3 Tbsp. bacon drippings
    3 Tbsp. plain flour
    2 onions, chopped
    1 bunch green onions, chopped
    2 Tbsp. parsley, chopped
    2 cloves garlic, minced
    2 c. rice
    2 1/2 c. water
    3/4 tsp. red pepper
    2 tsp. salt
Preparation
    Brown meat in drippings; remove meat. Add flour and brown to a dark color. Add onions, parsley and garlic and cook until soft. Add water and rice. Add salt, pepper and meat. Bring to a boil; lower heat and simmer 1 hour, covered. When rice is done, uncover and cook until rice is a little drier.
