Aunt Joni'S Chicken - cooking recipe

Ingredients
    1 1/2 to 2 lb. boneless chicken breasts
    3/4 c. Argo cornstarch
    1/4 c. all-purpose flour
    1 tsp. baking powder
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 c. water
    1 egg, slightly beaten
    1 tsp. dried basil
    1 clove garlic, minced
    oil (for deep frying)
Preparation
    Cut chicken breasts into 1-inch wide strips (after rinsing and trimming away any fat).
    In bowl, stir together with whisk or fork the cornstarch, flour, baking powder, salt, pepper, water and egg.
    Mix in basil and minced garlic clove.
    Heat oil (2 to 3 inches deep) in large pot.
    When oil is hot, place several of the chicken strips (after dipping into the batter) into the oil.
    Fry until golden.
    Drain on paper towels.
    Repeat until all chicken is batter dipped and fried.
    (You can also use this batter to deep-fry zucchini, carrots, mushrooms, onions, etc.) Serves 5 to 6 people.
