White Fruit Cake - cooking recipe
Ingredients

1/2 c. butter or margarine
3/4 c. sugar
1 Tbsp. brandy or fruit juice
2 c. cake flour
1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. soda
1/4 lb. candied pineapple, chopped
1/4 lb. candied cherries, chopped
1/4 lb. dried apricots, chopped
1/4 lb. coconut, grated
1/4 lb. citron, chopped
1/2 lb. Sultana raisins
1/2 lb. blanched almonds, chopped
5 egg whites
Preparation

Cream butter or margarine in large bowl of the electric mixer until the consistency of heavy mayonnaise.
Add sugar and cream until light and fluffy.
Add brandy or fruit juice.
Sift together the dry ingredients and sprinkle over the fruits and nuts. Gradually add to the creamed mixture and beat until blended.
This mixture will be very crumbly.
Fold in the stiffly beaten egg whites.
Pat in small greased tube pan.
Bake in a 250\u00b0 preheated electric oven or roaster for 2 to 2 1/2 hours.
Yield:
About 3 1/4 pounds.
