Tropical Sweet Potato Casserole - cooking recipe

Ingredients

4 c. cooked sweet potatoes, mashed
1 tsp. salt
1/8 tsp. cinnamon
1/4 c. brown sugar
2/3 c. drained crushed pineapple
1/2 c. flaked coconut

Preparation

Combine sweet potatoes with salt, cinnamon, brown sugar, half the pineapple and 2 tablespoons butter. Beat well.
Place in a 1 1/2-quart casserole; spread remaining pineapple with coconut. Bake in moderate oven (375\u00b0) until heated through, about 30 minutes.
