Potato Salad - cooking recipe

Ingredients
    4 c. diced cold boiled potatoes
    1 large onion, finely chopped
    2 Tbsp. parsley, chopped
    1 1/4 tsp. salt
    dash of pepper
    4 Tbsp. prepared mustard
    1/2 tsp. sweetener equal to 2 tsp. sugar
    1 c. celery, chopped
    crisp salad greens
Preparation
    In large bowl put potatoes, onions,
    parsley, salt and pepper. Toss lightly. Combine mustard, sweetener and vinegar in small bowl, mixing well.
    Pour over potatoes.
    Stir until well blended. Arrange on greens 1/2 cup salad per person.
    Serves 6.
