Salmon Souffle - cooking recipe
Ingredients

2 Tbsp. melted margarine
2 Tbsp. flour
1 c. milk
2 beaten egg yolks
1/2 tsp. salt
1/4 tsp. nutmeg
dash of pepper
1 lb. can flaked salmon
2 stiffly beaten egg whites
Preparation

Make white sauce of margarine, flour and milk.
Slowly add small amount of sauce to egg yolks and stir into remaining sauce. Add salt, nutmeg, pepper and salmon.
Fold in egg whites.
Bake in greased individual baking dishes or casserole in a moderate oven at 325\u00b0 for 45 minutes.
Serve immediately.
Garnish with lemon. Serves 4 to 6 people.
