Apricot Ginger Chicken Breasts - cooking recipe

Ingredients
    2 Tbsp. finely chopped onion
    1 tsp. olive oil
    1/4 c. apricot preserves
    1/4 c. ketchup
    1 Tbsp. red wine vinegar
    1/4 tsp. ground ginger
    4 boneless, skinless chicken breasts
Preparation
    For sauce: In a small saucepan, cook onion in hot oil until tender. Stir in all ingredients, except chicken. Bring to a boil; reduce heat. Cover and simmer for 3 minutes. Remove from heat. Preheat grill to medium. Grill chicken, uncovered, for 12 to 15 minutes or until chicken is no longer pink (160\u00b0), turning once and brushing with sauce during last 5 minutes of grilling. Reheat remaining sauce and pass with chicken. Serves 4.
